I'm trying to find all the places I've recorded my waffle recipes and post them here on my blog, with labels, so they can be found, and shared... Viva la Waffle!
This time I bring to you my Key Lime Waffles that I made last summer.
First I mixed the dry ingredients:
One Box of Pillsbury Key Lime Premium Cookie Mix (I think this is a Seasonal item from Target stores)
1 cup all-purpose White Flour
1 cup Ground Almond Meal (I get this at Trader Joe’s)
1 teaspoon Baking Powder
Then, one at a time, I added:
1 cup full-fat Ricotta Cheese
1 stick of Butter, softened
1 tablespoon Coconut Oil
2 teaspoons Vanilla Extract
3 fresh Eggs
2 ½ cups Water
Note: Slowly add the water, ½ cup at a time, or your mixer may kick it all out of the bowl.
Cook on a waffle iron!
